This veggie-tastic antipasto is the perfect, colorful dish idea to bring with you to parties, and barbecues, for bigger groups, but also perfect for individuals and small groups. The recipe makes enough for plenty of leftovers which are easy, no need to microwave or heat in the oven, to bring with you or prepare for a quick meal.
- 1 box of farfalle/bow tie pasta
- 1 red onion
- 1 red bell pepper
- 1 green pepper
- 1 yellow pepper
- 1 orange pepper
- 1 broccoli crown
- 1 cucumber
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tbsp cajun seasoning/spices
- 1/2 cup of Wishbone Lite Italian dressing
Start boiling water for the pasta and chopping up all of the vegetables. Once water is boiling pour in the entire box of farfalle pasta.
After the pasta is cooked strain out the water and run the pasta under the cold tap and mix the pasta around with your hands while tap is running, no longer than 15 seconds or so.
Add half of the pasta and half of your chopped vegetables into a large container (preferably one that has a lid). Then add half of each of the spices to your mixture and half of the dressing. Mix together and repeat this step adding the rest of your pasta, spices, and dressing. Then mix once more.
Finally, put the lid on the container and let the antipasto chill for an hour before serving.
Note: If after the first few bites you feel the pasta is too dry for your taste, feel free to add some more dressing, mixing it in as evenly as possible.
