After many a trip to the grocery store in search of new, yummy sounding, vegan-friendly dressings, and coming back empty handed, I decided to take matters into my own hands and I am glad I did because I am absolutely obsessed with this dressing.
Great for salads, sandwiches, and dips.
- 7 tbsp oil
- 2 tbsp lime juice
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 2 garlic cloves
- 2 tsp dijon mustard
Measure everything out and dice the garlic, then add all of the ingredients into a blender (a small pulse blender works great).
Lastly tear up some cilantro and cover the top layer of your concoction with the green herb and blend.
Refrigerate when done, or use right away!
