Looking to sup on a meal consisting of comfort food that is not only quick and easy to make, but also the perfect feast for a cold or rainy day? Then this is the delicious, duet dish (Holy alliteration Batman) for you! And seriously, we wouldn’t blame you if you decided to make two.
- 2 slices of bread
- Earth Balance Buttery Spread (to coat the pan)
- Vegan cheese (in this I use Daiya PepperJack Style Shreds)
- 3 – 4 hamburger pickles
- 1 can of vegan-friendly tomato soup (I use Campbell’s Tomato Soup)
First off, open up you container of tomato soup and cook according to the instructions on the package.
Now, if you’re a grilled cheese pro and you’ve done this many times before, feel free to jump ahead and simply add pickles to your sandwich.
For everyone else…start by warming up a pan at medium heat and coating the bottom of that pan with Earth Balance Buttery Spread. Next place your two slices of bread face down (does bread even have a face?) in the pan letting them warm up for a few seconds before you add on your cheese.
Once your cheese is placed on turn down the temperature a notch, put the two slices together, and cook each side of the sandwich for about 4 minutes. Don’t forget to flip!
After your sandwich is fully warmed up and the cheese completely melted, open up the two slices of bread and scatter inside your pickles. Lastly, and most deliciously, pour your hot soup into a big bowl, grab half of that sandwich and make sure to dip before you take your first bite.
