Hope you’re having a great one and celebrating in style. If not, then why not satisfy your vegan sweet tooth with these yummy, tummy-filling, miniature pancakes. Whether it’s Breakfast, Lunch, or Dinner, it doesn’t matter. These mini vegan chocolate chip pancakes can be enjoyed at any time.

Ingredients:

  • 2 tbsp ground flax seed
  • 2 tbsp water
  • 1 cup non-dairy, unflavored milk
  • 1 & 1/2 tsp apple cider vinegar
  • 1 cup flour
  • 1 tsp sugar
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1 tsp baking powder
  • 1 & 1/2 tsp vanilla extract
  • 1 tbsp oil
  • 1/4 cup vegan chocolate chips

Instructions:

Begin by mixing together your ground flax seed and water. Next, in another bowl, mix together your dairy-free milk and apple cider vinegar. Let sit.

In another, larger bowl, add together all of your dry ingredients and combine thoroughly. Now, add your flax seed and water mixture to the dairy-free milk and apple cider vinegar bowl. Add your vanilla extract and oil to this then whisk together.

Once all of your wet ingredients are mixed together, add in the dry ingredients and mix until smooth. Once mixed, add in your favorite vegan chocolate chips and mix some more until the chips are spread throughout the pancake batter.

Turn on the stove to medium-high heat. Add your skillet to the burner and let that heat up for a few minutes.

Using a 1/3 measuring cup, scoop out that amount of pancake batter and add to your skillet. Let sit 1-2 minutes, or until your see your pancake beginning to bubble, and flip over. Let this side cook for 1-2 minutes also.

Repeat for as many 1/3 cups you can get out of your batch! Then serve and enjoy!
